When we decided to make butter, we were determined to make it simple. Just cream from certified organic cows and a touch of salt.

The result? A melt-in-your-mouth experience that captures the seasonality of our Timboon dairy farm. Each stick of butter is individually hand-packed into a home compostable wrap and packaged in a 100% recyclable box. So that’s it…

HOW WE MAKE OUR BUTTER

At different times throughout the year, we have an abundance of cream on the farm. Rather than adding it to the waist lines of our staff, we decided to share the love with our customers by crafting our new Organic Salted Butter.

Eating creamy butter is one of the pure joys in life, and it’s a pretty simple process to make this delicious household staple.  

We collect the cream from the Low Fat Milk production process then pasteurise it low and slow. If we are making our Cultured Butter, we would add in the culture at this point and let it ferment overnight.

We then put it into our butter churn and churn, churn, churn away until it splits, and you have the lovely beginnings of butter. Here, we strain off the buttermilk (which is given to our café to use in delicious things like buttermilk pancakes), add the salt and churn one last time.

The butter is washed, kneaded, shaped and then refrigerated.  Our team cuts it into 220g logs, hand wraps and hand packages it, ready to ship off to your favourite Victorian Schulz retailer.


wHAT’S THE DIFFERENCE BETWEEN FRESH AND CULTURED BUTTER?

Our Fresh Salted Organic Butter is made from cream and salt - pure and simple. It’s incredibly smooth, leaving a clean taste in your mouth with a lovely hint of salt. Due to its organic nature, it has a fridge shelf life of five weeks.

Our Cultured Salted Organic Butter has a thicker texture and is treated with cultures, similar to yogurt. The culture is added to the cream, allowed to ferment and then churned. The result is a fuller flavoured, silky butter, with a slight tang. It also has a longer fridge shelf life of approx. three months.


HOW TO STORE YOUR BUTTER

The million-dollar question – room temperature or refrigerated? It’s really a personal preference but here are a few tips from us.

Room temperature

If you like to spread your butter with ease, we recommend keeping your butter on the kitchen bench in a sealed container or butter dish to preserve its flavour and keep away any bacteria. Another bonus of room temperature butter is it won’t rip holes in your bread when spreading it! The butter should be soft, but not lose its shape.

RefrigeratED

If you like to keep your butter in the fridge, keep it wrapped in its compostable wrap, away from anything that’s a bit stinky–onions, salami, blue cheese! It’s a friendly type, and likes to take on other odours if you let it.  You can also store in the freezer, unopened, for up to six months.

If you’re like us and want the best of both worlds, you can keep your Schulz Organic Dairy Butter in the fridge and take it out 20 minutes before you want to use it. And remember, don’t forget to put the wrapper in the home compost once you have enjoyed all the buttery goodness!


HOME COMPOSTABLE WRAPPER

The road to new product development can be challenging and we are particularly proud of the research that went into finding the perfect home compostable packaging for our butter. 

With industry and government committing to Australia’s 2025 National Packaging Targets of 100% reusable, recyclable or compostable packaging by 2025, we were committed to getting our packaging right, from the beginning.

We spent 12 months sourcing the perfect wrapping for our butter, finally choosing to go with Sulpack.Their compostable packaging ticks all the boxes in terms of sustainability and affordability, plus it has been thoroughly tested in the dairy category.

Our home compostable wrap is produced from responsibly sourced and renewable wood pulp. It is biodegradable and home compostable, which means when you have finished eating your delicious butter, you can put the wrapper straight into your compost bin at home. Over time, the wrapper will break down and decompose alongside your fruit and vegetable scraps, coffee grounds, egg shells and garden waste ready for you to feed your garden.
